Carrot Cake

300g SR flour
1 tsp cinnamon
1 tsp mixed spice
4 medium eggs
350g caster sugar
1 tsp vanilla extract
300ml olive or vegetable oil
Pinch of salt
60g hazelnuts
60g walnuts
150g sultanas
3 large grated carrots

Preheat oven 180oC

Chop hazelnuts & walnuts for 5 seconds on speed 5 - set aside

Grate carrots - 10 seconds on speed 8 and set aside (you can grate by hand if you want the proper carrot look in the cake)! - set aside

Put flour, cinnamon and mixed spice in bowl and mix for 5 seconds on speed 4

Add eggs, sugar, vanilla, oil and salt and mix for 30 seconds on speed 5

Add nuts, sultanas and carrots and mix for 50 seconds on  :-: speed 5-6

Then mix up a bit with the spatula and then mix for another 10 seconds on  :-: speed 5

Put into a greased/lined square or round tin and bake for 1 hour

CREAM CHEESE FROSTING

250g philly cream cheese
100g caster sugar
2 tbsp lemon juice

Put all ingredients into bowl and mix for 20 seconds on speed 5 and then lather onto cake.

May all dairy items in your fridge be of questionable vintage.
