This Lemon Sorbet is from the My Way of Cooking book LeeJ - serves 8
400g water
350g sugar
250g water, cold
200g lemon juice
1 egg white
Place water & sugar into mixing bowl, cook 5 mins/100oC/speed 3.
Add cold water and lemon juice, mix 3 sec/speed 3.
Add egg white & mix 3 sec/speed 4. Pour mixture max, 4cm high into freezable forms (eg aluminium, silicone) and cover with cling film. Cool mixture completely before freezing for at least 8 hours.
Cut frozen mnixture into chunks (approx. 4 x 4 cm) place them into mixing bowl and mix 30 sec/speed 4 with the aid of spatula.
Serve imnmediately.
