Pumpkin White Chocolate and Macadamia Nut Cookies

Ingredients:
120g pumpkin puree (dice, microwave 5 mins, set aside)
100g macadamia nuts (microwave 3 mins, set aside)
95g white chocolate
100g raw sugar
100g brown sugar
120g softened butter
1 egg
1 teaspoon vanilla extract
160g Plain flour
½ teaspoon bicarb soda
¼ teaspoon salt
75g rolled oats

Method:

Preheat oven to 180o
1.   Chop chocolate and nuts Speed 5, 2 Seconds – or I prefer to chop nuts by hand – set aside.
2.   Mill raw sugar, 3 Seconds, Speed 9. Add brown sugar and butter to bowl for 2-3 minutes, Speed 3 until light and  creamy.
3.   Beat in egg, pumpkin puree and vanilla extract 6 Seconds, Speed 4.
4.   Add flour, bicarb soda and salt to bowl and mix for 5 Seconds, Speed 4.
5.   Add rolled oats, chocolate and nuts for 30 Seconds, Speed 4.
6.   Place evenly spaced tablespoons of dough on cookie sheet.
7.   Bake for 8-10 minutes, cool on tray until easy to remove.
8.   Hide them.

Tip: Watch while they are nearly cooked, as they look and taste better before going really brown. (Slightly browned around the edges okay)

mmm CP63. These look great. My boys hate pumpkin so would i be able to slip these past their discerning taste buds ? ;) ;)

Yum, they look and sound good - my kids love pumpkin scones so these will go down a treat, minus the nuts! Do you think that the macadamias could just be omitted, or should something else be increased? The kids couldn't take them to school with nuts in anyway.

VHJ - as long as they didn't see the pumpkin go in I'd invite them to lick the bowl while they are in the oven  ;) its only 120g so it should go below the radar  ;D it does give the orange colour tho, so maybe if they ask tell them its a type of food coloring. If they really, really like them tell them they have got pumpkin in them and they may start to change their minds about being so anti-pumpkin.

Virgo the macadamias was equivalent to 1/2 cup so you may be able to sub with something else. hard to say tho because the combined flavour is so yummy. Maybe just make them for home...

Maybe just make them for home...

that is exactly what I do now, I have a home container and a school container. That way we don't miss out on the yummy ones :)

these biccies are not the crunchie type, and I would suggest when storing them to put a paper towel between each layer to prevent them from sticking to each other. This would make removal from the container less prone to breakage and having to eat up the broken ones (did I do that?  :o)

It is a well known fact that broken biscuits have less calories. :D

Great recipe. Will give it a try, I can't imagine pumpkin in biscuits.
May all dairy items in your fridge be of questionable vintage.
