Thanks Judy. My Mum used to do one with very similar ingredients but it was pouring consistency so I was just wanting to double check as while I liked the flavour I was never a fan of the texture.

Em, this is our favourite mayo and the longest a bottle has lasted in our fridge is just over a week. (This is a yummy mayo and usually doesn't last the week)
Wonder, this mayo is spreading consistency. As Judy says, you would have to thin it to make a pouring consistency.

I'm a mayonnaise freak and have tried most of them and use it on almost everything, I am in the middle of cooking this and IT IS AMAZING.......

I'm looking o make a wasabi mayonnaise but really don't lie raw eggs, does anyone know if this would take on the flavour of the wasabi ok or would it compete to much with the other flavour a?

Wonder, this is just a tangy mayo really and I'm sure it would be fine with wasabi. You could use Rice Wine Vinegar to give a more asian flavour. Perhaps make a smaller quantity to trial it.

Thanks MJ. I'm not much of a mayo eater but DH loved a wasabi mayonnaise we used to be able to buy but I can't get it anymore so thought I would give making it a go. I was worried the other flavours may have been too strong. I'm assuming it would still work if I left out the mustard etc. I'll have to give it a go.

I made this mayo at the weekend and DH and DD declared it the best mayo they have ever eaten. DD asked to take some home with her. Thanks for the recipe MJ.

Dz, on MJ's blog she suggests either sunflower, grapeseed or ricebran oil for this recipe.

Thanks JD. Yes, any light unflavored oil will do. You can even leave the oil out! My Mum didn't use any in her original recipe, that's my tweak to get a creamier consistency.

I've just made a batch of this too - first time I've ever made a cooked mayo. It makes heaps so could quite easily be halved for smaller families. I might have to give some of mine away as it made 4 jars of varying sizes.
