Smoking!!
« on: December 09, 2010, 08:27:09 am »
Hi  All

Our family loves nothing more than a fresh piece of Tassie Salmon covered in Dukah and popped in the smoker.
I wondered if you could do this in the Thermomix?  A few smoking chips in the basket and the salmon in the Varoma???  What do you all think?  My consultant looked a touch concerned when I asked her!!! :o :o :o :o

Why not try it. Also wrap the salmon in paper bark in the varoma. More like steaming than smoking but you might achieve a similar flavour.

You can also buy liquid smoke at BBQs Galore.

I'd be interested to hear how it goes.
May all dairy items in your fridge be of questionable vintage.

I smoke my salmon on a rack in the wok (marinate it first), with some basmati rice, green tea & brown sugar on a piece of foil underneath, and a lid on top.  Then I sear it afterwards.  YUM!  I have tried to think of ways to do this in the tmx - I guess you could steam it afterwards instead of searing it... I wonder if you could cook and stir the rice, green tea & brown sugar in the jug while you steam the salmon on top?  hmmmm.... might stick to the bottom of the jug though, not sure.  Let us know how you go!
