Red Onion Jam---2 kgs

Hi All,
I love the forum by the way,I have a request for red onion jam recipe conversion cause I am using 1 kg of unpeeled onions to start with. Sorry I hate doing the maths.Thanks Louise.

I had a go the other night with this relish and I used 1kg of red onions and doubled the rest of the ingredients and it turned out yummy. The consistency was a bit mushy cause I chopped up the onions in batches first before cooking but next time I would leave the onions in quarters for a more distinct onion look..does that make sense??

Yes bulletproof4, sorry no-one responded to your earlier request but nice to see you managed to work it out for yourself. When I make caramelised onions, I hand slice them but have never made onion jam so don't really know what the texture is supposed to look like.
