Carrot and Red Pepper Soup

Name of Recipe: Carrot and Red Pepper Soup

Number of People: 4

Ingredients:
  • 2 carrots (peeled and chopped into quarters)
  • 1 onion  (peeled and chopped into quarters)
  • 1 clove of garlic (peeled)
  • 1 red pepper (deseeded and roughly chopped)
  • 1 red chili (deseeded)
  • tbsp of tomato puree
  • water
  • 120g of cream or 100g of milk (I used milk)
  • 1 vegtable stock cube


Preparation:

  • Place the garlic in the TM, blend at speed 10 for 4 seconds and scrap down the sides of the bowl afterwards.
  • Place the remaining ingredients except for the cream and water in the bowl and chop at speed 4 for 10 seconds.
  • Fill the bowl to the one liter mark with water.
  • Cook for 15 minutes/100 degrees/speed 2.
  • Once cooked, add the cream and blend for 1 minute at speed 9
  • Add salt and pepper to taste

Just joined and you have posted your first recipe bazeire - well done!  Had to check your profile to see where you lived though as I figured it wasn't in Australia - was right, Ireland where a nice bowl of soup would go down well right now.

It would certainly be soup weather over that way. I think this would be nice served cold too.
May all dairy items in your fridge be of questionable vintage.
