Fresh Coconut cream
« on: December 30, 2010, 01:00:04 am »
Hi does anyone have recipe for homemade coconut cream? Would live to make my own as I don't like buying canned food due to the BPA in the linings of the cans. Thanks

ahoney, I couldn't find a coconut cream recipe on the forum but there is one on Page 19 of the Fast & Easy Indian Cooking book made from coconut flesh. My EDC has coconut milk made from dessicated coconut and the Taste of Vegetarian book has coconut milk made from coconut flesh.

I don't know if this is a help to you but a Sri Lankan friend of mind uses a milk powder she gets from an Asian shop.  You add less water if you want coconut cream and more for the milk.  She tells me that this way you have no waste and it's perfect all the time.  She's away at the moment so can't ask what the brand is but I'm sure you won't have any trouble finding it if you wish to use this.

I buy the powder for the coconut milk/cream. It's Ayam brand. I got it in Woolies and have bought it in Coles. I like it as I can make as much or as little as I need.

ahoney, I soak 60 g unsweetened  coconut flakes ( you can grind them before)  in
180 g water for 5 minutes. Warm for 1-2 minutes / 37 °C / speed 2 and blend for 1 minute / speed 9-10
