Help! EDC Mayonaise splitting! emergency rescue needed

Hi ladies,
I've made this very successfully a few days' ago, but today it went bottoms up  :(  I think I failed to let the yolk come to room temperature and it is a very humid and warm room here in Perth  ;)  Anyhow, the mayo emulsified beautifully, and then just at the end it split  :(   So I did the usual rescue, and got a second yolk out, brought it to room temperature, tipped the mixture out of the bowl, put yolk in bowl, beat it a little on speed 4, then slowly began to re-add the curdled mixture.  This would work with a normal beating machine  ;D but no can do with my TMX.  It might be the weather, I don't know.

Is there a rescue that involves a little boiling water I seem to recall?  Any other help very welcome.  I currently have 250g grapeseed oil and 2 yolks about to go utterly to waste  :'(  Boy, do I hate waste.

As far as I know, the re-using the failed batch usually works...  did you add more vinegar/lemon juice with the 2nd yolk (and mustard, etc) ?  I use white wine vinegar instead of lemon juice, as it's more reliable - the acid doesn't vary like it does with lemons.

Must admit I don't use the EDC recipe, particularly after a failed attempt. I know this doesnt help you now, but this recipe works for me every time:

I use Elisabeth's mayo recipe too and haven't had a failure. So easy as you don't have to wat for things to be at room temp. - straight from the fridge is fine. Perfect for our hot and humid weather  :)

It's a MIRACLE! You did it!!

I started with a whole egg and 37oC for 1 min at speed 4 then slowly added my curdled mess with a jug thru the hole in the top, and after about 4 or 5 minutes it actually emulsified!!  You are my New Year Angels!  And thank you to Elisabeth for the original recipe!  Now I have some rather gorgeously rich 2 yolks plus one egg plus  250g oil dose of mayo. And it works! And I didn't have to throw anything out!

Thanks everyone for your help; now to the coleslaw.  (Better wait till hubby wakes up from his nap before I belt into those carrots, methinks  ;) )

Glad everyone could help and that Elisabeth's recipe worked. I have been making mayo for over a year with that recipe and never had a failure yet  ;)

Just thought I'd let you know that I rescued my first split batch of EDC mayo today by emptying the jug adding another egg yolk and slowly adding the curdled mess.  All good now :)
