Honey Joys
Makes 20
Ingredients
90g butter or marg
125g sugar
1 Tbsp honey
120g of cornflakes
Preheat oven 150
o
C.
Place honey, sugar and butter in TM jug 7 min/100
o
C/speed 4
add the cornflakes to jug 2 min/100
o
C/ Reverse/speed 1
Then place in patty pans and bake in oven for 10 min
I then chill mine in the fridge love them cold.
29/9/12 - I have amended the quantities of this recipe following Chelsea's comment below as the original weights were incorrect in this recipe. JD Thanks JD you beat me to it. xxCookie1

yum. i love honey joys, and i love them especially when i don't measure everything properly and have too much honey and butter and i crush the cornflakes so the resulting mess (yes, mine are a mess) is dense, sticky and chewy. i'm sooo bad....

I have just made these. I haven't had them since I was a child and am not sure if they are quite right. Is there normally a big pool of the thick sticky liquid in the bottom of the each paper? I just wondered if perhaps they needed more cornflakes in them or perhaps they are undercooked. They feel a bit squishy.

I'm sorry to say these didn't work at all.
The gluggy syrup is more than halfway up the side of the patty pan and is starting to seep through the pretty papers. I could probably set them in the fridge (they didn't set after coming out of the oven) but they would be very congealed and I wouldn't want to serve them.
I looked up the Honey Joy recipe on the Kelloggs website and I weighed the ingredients. They use 90g butter, 125g sugar, 1 tbsp honey and
120g cornflakes
. I will try these tomorrow.
