Meagan, sorry but I lost the spot where you posted your ? about Pumpkin Bread. I consulted several Bread Books and they all used mashed pumpkin in their breads, some roasted and some not. However to get what I think you want I would use some roasted or steamed pumpkin, cut into small cubes, mash some and add this to the basic mix at the start and save some cubes and kneed in by hand before 2nd rise.
