What to do with egg yolks?
« on: January 25, 2011, 02:04:11 pm »
Of course for Australia day, I had to make Pavlova! It's a tradition with our friends and now an expectation.  :)

I don't want to waste the egg yolks. Can I use them for Torte Caprese or do I really need the egg whites as well.?

Any other suggestions for using up egg yolks would be greatly appreciated. I don't want them to go to waste.

Thanks in advance

My children love meringues but the last time I whipped egg yolks in the TMX they were a right flop!  They were overwhipped so I'll have to have another go and keep a closer eye on them ...

Same here! A lot of Portuguese deserts and cakes, especially tradicional recipes uses lots of yolks. We are always searching uses for the whites  ;D

Whites aren't a real problem as they freeze so well.  Here is Australia, sorbet or pavlova.  Annette Sym writes diet cooking books and she uses egg whites in her cakes, omelettes, pancakes etc

Looks like choc chip cookies and ice cream on the menu then! What a yummy combination. And portuguese tarts. Yummmmm! What a shame it has to be all sweet stuff.  :-)) ;) :D

Oh well, I can't have them going to waste but all the cooking will be going on my waiste and hips and thighs...... ;D

I'm going to make some orange sabayon with my 12 egg yolks! (a couple of batches!) - it would be so yummy poured over a Torte Caprese - what do you think?  (Or maybe that's too many sweets for one day - pavlova, torte caprese AND sabayon - even if it IS Australia Day!!)  ;D

I made the creme angalise (pouring custard) from the EDC yesterday after I made the pav. Utterly divine and beats custard with cornflour hands down. I let it cool, added frozen blueberries and popped them in icypole moulds. The kids love them and I have pre made desserts ready.
