Baked Spice and Rosemary Drumsticks
«

This recipe is tasty, both hot and cold. It is low calorie.(2 drumsticks 365 calories ) It is also easy and baked in the oven, so even on a hot day it doesn't heat the kitchen up too much. The inspiration is from CalorieKing.com.au
Set oven to 200
o
C
8 chicken drumsticks, skinned
2 egg whites
1 cup of fresh wholemeal breadcrumbs
1/4 cup of almonds
1/4 cup of fresh rosemary
1 1/2 dessertspoons of KFC spice coating mix, or other spicy mix powder.
Place almonds and rosemary in bowl of TMX and zap to form fine crumb.
Add fresh bread crumbs and spice mix and zap to mix. Remove and save in large bowl.
Add egg whites to bowl,(no need to wash out), and mix on speed 7 for 5 seconds.
Tip into a bowl.
Dip drumsticks first into egg white and then into breadcrumb mix. Make sure they are well coated.
Line a baking dish with foil or silicon sheet and place coated drumsticks on it
Spray lightly with Rice bran oil and cover with foil.
Bake covered for 30 mins.
Remove foil and bake for another 30 mins. Turn 1/2 way through. Bake until cooked.
Serve with salad or steamed vegies.
members' comments
CP - lots of mmns mmns and compliments. When I asked for a comment - "spicy and nice". I cooked the chicken a little longer by about 10 mins just because the drumsticks were really plump. You really are a star.
VHJ - it was delicious. The whole family loved it, so thanks for another great recipe chookie.
JD - I used yoghurt to coat the drumsticks instead of egg white and only half the quantity of rosemary (not my favourite herb). They went down a treat, DH loved them Chookie. Served with Salsa Verde Potatoes and steamed vegies.
KerrynN - We enjoyed this for dinner tonight. DH and DS6 found the coating a little too spicy (DH thinks he would use 3 slices of bread rather than 2 and use only 1 tbsp of KFC spice mix) but DS10 and I both really loved it! Delicious peppery taste and I like the addition of the rosemary flavour. We forgot to cover in foil (truthfully, DH was sure the recipe didn't call for this until he re-read the recipe after 20 mins in the oven already) so only cooked for 40 minutes and the chicken was perfectly moist. We will definitely make this again, and if there were ever any leftovers I can see that it would be very popular for school lunches. This was a great "last minute" use of the KFC spice too (as compared to having the chicken soak in the buttermilk in advance). Yummy!

Good one Chookie, with everyone looking for healthy alternatives during the summer months in particular, this one fits the bill. DH loves drumsticks and they are so cheap.

Judy, you are quite right, the Avocado on the plate cost more than the drumsticks

Looks delicious Chookie. It's sure to be a winner in this house as the KFC mix is requested frequently and chicken drumsticks are my boys favourite meat. Think I'll have to increase to 10 drumsticks as DH & DS1 eat 3 each

DH loves chicken drumsticks so CP's favourite list reminded me I had to make this one for him. I used yoghurt to coat the drumsticks instead of egg white and only half the quantity of rosemary (not my favourite herb). They went down a treat, he loved them Chookie. Served with
