Cocoa liquor in thermomix?
« on: February 13, 2011, 05:11:30 am »
Hi Everyone

I have some raw cocoa beans which we have roasted and skinned. I think they can be converted into cocoa liquor in the thermomix but not sure at what speed or for how long. We have what looks like ground coffee at the moment but it is supposed to turn into a pourable liquid.

Has anyone else had a go at this??

When I was looking at making chocolate, I found this: How to Make Chocolate.

Sounds like Thermie should be able to do it.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

We managed to make it work (sort of) - roasted the beans in the oven then ground them in TMX - kept grinding with a heat of about 50 degrees and eventually (maybe 30 mins) it does become chocolatey. It starts of looking like coffee grounds but the continuing grinding and heat makes it into a thick paste with a very strong dark chocolate taste.

Our batch was still quite gritty but i think this may have been due to the small amount we were doing. A bit of sugar and it tastes like dark chocolate. Didn't add any dairy. it solidifies to rock hard in the fridge but is quite soft at room temperature. Not sure if I'd go to the bother again but interesting to try!
