I make it using Greek yoghurt, and it even works with the 2% fat version

I loved this and now I'm making it gain with caraway. I have no yoghurt though so we shall see how it turns out!

You could substitute sour cream.

I love this bread too.

Thanks for the heads up on this bread CC and Cookie. I didn't end up making the other one. I'm up to about the 4th loaf of this. Everyone loves it except DH :-)) I don't like caraway seeds so I used poppy seeds instead.

I don't use any seeds at all. I like the caraway but DH doesn't.

I enjoy it toasted too for my brunches.

Additionally, when i wouldn't be able to finish it for some reason  (even if it stores quite long) i cut it into thin slices and place in my freezer.
I toast when needed

Ooh, as a new Thermy owner, who hasn't yet attempted bread, I can't wait to try this.  I have dry yeast in the cupboard, could this be used instead of fresh?  And would the quantities be the same?

It's usually half as much. I use 2 teaspoons of dry yeast for this recipe.

I made this today with dark rye, fresh yeast, molasses and caraway seeds. My loaf doesn't look as pretty, but DH and DD  have helped themselves to seconds and I don't think it will last very long at all. DD toasted a slice and declared that it was nice and crispy on the outside and soft on the inside. I'm sure I will be making this again
