Smokey Capsicum & Spinach Frittata

Name of Recipe:  Smokey Capsicum & Spinach Frittata
Number of People:  6-8
Ingredients:

1 onion - quartered
1 clove garlic
1 large red capsicum - quartered and seeded
1 large green capsicum - quartered and seeded
2 carrots - peeled and chopped
small handful flat leaf parsley
A good handful of baby spinach
2 tsp dried smoked paprika
8 eggs
1 MC (100g) cream
40g olive oil
1 Tbsp. TM stock
80g grated cheese (used tasty)
cracked pepper





Preparation:

Pre-heat oven at 180c fan forced.

Add onion & garlic and chop 6 seconds, speed 6.
Add 20g olive oil.  Cook 3 minutes, varoma temp, speed 1.
Add chopped carrot, and chop 4 seconds, speed 6.  Scrape down jug.
Add quartered capsicums &  chopped parsley, and chop for 7 seconds, speed 4.
Scrape down jug and add TM stock, smoked paprika, 20g olive oil and cook 8 minutes, varoma temp,  :-: speed 1.
Add the eggs, cream, baby spinach, cheese and cracked pepper.  Mix for 10 seconds,  :-: speed 3.

Add a dob of butter to a good large non-stick fry pan (that has oven proof handle), and swirl butter around on heat (medium low).  Pour the egg mixture into fry pan, and cook on stove for about 5 minutes (or til base is set).
Sprinkle the top of frittata with some more smoked paprika.
Transfer fry pan to the oven, and cook for 8-10 minutes, or until the filling has set.
Remove from oven, cover top with foil, and let stand for 5-10 minutes before slicing.

Cookie:I'm going to use the top part of the varoma. Wet some baking paper and scrunch it up and then put it loosely into the varoma, pour in the frittata and then steam it. (you need to make a space on the scrunched up baking paper). I think a half quantity will fit ok. Thermomixer did this some time ago.

 We had this last night and I cooked it in the varoma. The taste is sensational. It is very soft because it was only steamed but that was fine. Now I know I can cook this type of thing when we are caravanning. I only made a half quantity as I don't think the full amount would fit in the varoma. It was plenty for us though and I had some for lunch.

KarenH:Bumping this recipe:  DH made it for lunch today, and it was so easy and tasty!  He reduced the smoked paprika from 1tsp to 1 pinch because the kids aren't fans of smoky anything, but the subtle flavour was still noticeable and really, really lovely.  DS even asked for seconds (unheard of, unless of course it is dessert  )

Are you going to cook it the same as Maddy or will you try cooking it in the Varoma Cookie?

I never thought of using the varoma! Drr silly me. I will use the varoma as I only want to make a half quantity. The paprika will give it colour. Thanks CC. Will save putting the oven on too. Will let you know how it goes.

Good one cookie!  Must try using the varoma for next frittata.

This might be a silly question....but can you use the larger section of varoma for it?   I noticed you used the smaller top portion.....was that just because you made half quantity?

I don't see why you couldn't use the bottom section. I only did it that way as that was what Thermomixer did in his demonstration photos.

on your high recommendation cookie, will have to give the varoma method a try. so much easier to cook and clean in the TM nowadays. great to see all you girls last night  :-*
