DH made this cake this afternoon (another reason why I LOVE the TMX - DH cooks heaps more!) and it is absolutely divine. It has a really moist, crumbly texture with a slight crunch on the outside. The flavour is subtle but oh so delicious. He reduced the sugar from 250g to 190g, and it was fine. Personally I love a really tart, lemony taste, so I would consider adding extra lemon rind - but it was gorgeous just the way it is. Nicest served slightly warm with thick cream

I really liked this one as well! I too would add extra lemon rind.
Good for people who are gluten sensitive.

I made this cake this afternoon and the family loved it. Split it in half and sent some to another family member. They served theirs with whipped cream and we had ours with vanilla custard. I thought the amount prescribed of lemon rind was fine. Our cake was beautifully moist. Will definitely be serving this up again. Yum!

Made this cake on Thursday. It was absolutely delicious! Very moist with a nutty lemony flavour. Will definitely be making this again.

I fully understand your frustration Kim, yes I would be the same. I can't wait until you get settled and get back to adding some recipes to your blog Kim. I have the Normandy chicken recipe sitting up near the top of my 'to do' pile so it won't be much longer until it reaches the top.

We go to Santiago de Compostela quite a lot and I'd love to be able to try and reproduce this cake. Is there anyone who could possibly let me have a copy of the recipe.
