how to use up a glut of green capsicums??

I have accumulated an excess of green capsicums from our weekly organic box delivery - and some of them are getting a little bit soft and wrinkly, and are not so great for salads ...... any ideas for how to use them up so that I dont waste them?

Stuffed capsicums.

chutney or pickles?
you could also roast them and pop in a jar and cover with oil - they will keep a bit longer then - pop them on a pizza :) :)

I hate green capsicums & would have to tell my supplier not to put any in my box (can you do that?) but I have googled and come up with the following recipe which would be easy to convert to the TMX - it uses 3 capsicums.

You can also deseed, dice and freeze them to add to omelettes, pizzas, soups & casseroles.

Like you Judy I am not overly fond of green capsicums. I prefer red or the best are yellow.

You can roast them and freeze them, then use them on pizzas, scrolls, omlettes or in sauces when you need them.  Or anything else where you want them softer anyway.

Thanks for all the suggestions!  Like cookie and JD I am not a huge fan of green capsicims ...... but I took cookies suggestion and did stuffed capsicums.  I used meganjanes idea of stuffed vegetables in passata  (http://www.forumthermomix.com/index.php?topic=2731.0), and made mushroom rissotto from EDC and stuffed the capsisums with that, and baked them in meganjanes tomato passata and sprinked them with parmesan and mozzarella ....... in the oven now.  They smell DELICIOUS!  Will post photo when finished.

Funny - I thought we also had a glut of zucchini - also from the organic veggie box delivery - so I made the garlic and herb breadcrumbs and the onion and roast pumpkin stuffing to do stuffed zucchini to go with the stuffed capsucim.  When I went to the fridge, I discovered NO zucchini ........ DH had used them all up making the zucchini cream pasta sauce yesterday  :D :D

Thanks again for all suggestions  :-* :-*  Any others I get in future I will roast and freeze, or try the green pepper rice.

Same deal here with the green capsicums.  :(
We don't like them at all and I have been wondering about some sort of pickle or chutney.
For those with the organic box weekly delivery, it often pays to check the swap box at the pick up point.  Lat week I swapped our green capsicums for some potatoes that someone else had left in the swap box - a win for me!

Lucky you for being able to have an organic vegie delivery!

Glad the capsicums worked out with the risotto and passata. That's a good way of doing them.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.
