Great idea, Judy. When I have to cook a Vegetarian meal, I often cook this and DD makes these for GC lunches for school.

That's good that he ate the quiches Judy. Perhaps he was getting tired of the veggies so a change will be good.

Made this today with fridge leftovers.

12 minis in silicone muffin tray. 23 mins as JD said.

100gms cooked smoked haddock
85 g fresh spinach (blanched and drained)
1 med onion
1/2 cup diced cooked potato
60g each frozen peas and canned corn
1/2 tsp turmeric
2 large eggs
1/2 cup each of cream and milk
S&P

I didn't use cheese but anyone else would probably want it.

My fitness pal said 102 calories each. Had 3 for lunch yummy!

I made this for dinner last night with some mixed vegs on the side.  I added grated carrot, mushrooms & finely chopped broccoli to the mix.

So easy to make and tastes delicious. 

The  man who said it can't be done should not interupt the woman doing it.

Loved these Chookie :)
I used up veggies in the fridge, spinach, peas, corn, mushroom and carrot.
Next time I make them, should remember to chop peas and corn as well as my lo is getting fussier..
She finds a chunky vegetable in her food, then she would not take another bite :(

One question, I know that bacon gives a very intense taste to food but as a vegetarian , not sure what would be the best way to replace it. I can remove it completely from the recipe, but curious to know if is there any thing I can replace it with and retain the intense flavor?
