Jenni, good to hear that. With all the little piggies around here, we have never had a chance to try it cold.

CC glad you liked it. Snoozie our Munchkin loved it with just bacon.I was wondering if you could do what they do in the pizza shop. Make the basic mix and then put mushrooms in one section and corn etc in another.

We had this the night before we came away. It was lovely cold for lunch the next day too. I love the way it forms a base-like the impossible pies do. Delicious thanks Chookie.

Salmon sounds lovely. Perhaps with a tiny bit of dill. I love salmon and dill.

oh dear this quiche lived up to its "Impossible Quiche" name yesterday. I had a small grated carrot, little bit a zucchini, yellow squash, corn, half a green chilli, bit of red capsicum, and of course the bacon and onion. It browned in the 45 min cooking time specified but was still sloppy so cooked it for another 15 before being forced to bring it out for fear of
really
burning it! This is what it looked like when getting it onto the plate (added salad after photo). Didn't look too good, but it tasted so delicious and can you believe that there were no leftovers???
I couldn't figure out what on earth went wrong, and about an hour later the penny dropped. So here's a photo of what a quiche looks like when you don't add the main ingredient....eggs...
(I just put a little reminder on the side of the recipe for next time
)

It still looks very appetising, even if you forgot the eggs.
