Need a Polenta Recipe that works in the TMX?

So....I'm having a dinner party tonight and wanted to make Polenta to go with the lamb shanks that are slow cooking in the oven right now (with orange, rosemary, cinnamon, mmmmm) and came here and find a bunch of tips about problematic recipes but I'm not finding "the right one." 

Anyone? How do I make good Polenta in the TMX tonight - maybe with Parmesan?

I haven't tried it but there is a cheesy polenta in the Meat on the Menu cookbook Maluhia - do you have that book? I'll pm you the recipe if you don't have it.   Obviously you have seen the plain one in the EDC - could you just add some parmesan to that one.

I've done the EDC one and it is nice.
May all dairy items in your fridge be of questionable vintage.

Thanks! I'm going to try the EDC one and add parmesan, will have to add Meat on the Menu to my cookbook collection soon.  Thanks ladies!

iIve made the edc one and it was lovely, put pizza toppings on it and baked it for lunchboxes.  I thought it had parmesan in it but I omitted it for dairy free and added some tomato puree as part of the liquid content as i needed to use it up.
