375g Green beans, trimmed
Pepper to taste
1-2-tbsp butter
75g macadamia nuts
1 large clove of garlic
Place 500ml of water into TM bowl and beans into Varoma dish. Steam on Varoma temp, speed 1 for 10 min.
Sprinkle with pepper and set aside. Empty TM bowl and dry.
Place garlic in TM bowl and chop for 5 sec on speed 7. Add nuts and chop by turning dial to close lid position and pulsing the turbo several times. Add butter and sauté for 4 min, 100ºC and speed 1.
Add beans and stir on reverse speed 1 for 10 sec. Serve.
This recipe has been converted from “Steaming” by Brigid Treloar
Tips: Try using other nuts instead of macadamias.
Cuilidh: I made this today much as per the recipe, it needed quite a bit of pepper and, as macadamias are so oily, I would suggest a bit less butter. I also think it would be best to simply use chopped macadamias instead of doing them in the TMX. Needs a good tsp of salt, but will make a very tasty side dish on a dinner table.

I have a varoma question. When you say "Place 500ml of water into TM bowl and beans into Varoma dish. Steam on Varoma temp, speed 1 for 10 min." do you preheat the water first? Seems like it takes a bit to bring the water to a boil, not leaving much time to steam the beans..... (sorry, no one to give me a demo)

If you can use boiling water it is quicker. If you are starting from cold water it may take 5 min longer.
What i usually do is put the water in and start heating while i prepare the vegies im going to steam. By the time they are ready to cook the water is hot and the vegies start cooking straight away. Once you start getting some steam it should only be 10 min for cooking. You are using fresh beans to so you want them to have a slight crunch still.

Sure does.... Is that pretty much a standard? When the recipe calls for add water and cook at varoma temp for x minutes, they're assuming the water is preheated?

Most of the cookbooks mean cold water unless they tell you otherwise. Steaming time is a bit of guess work somethime though because it all depends on - the amount you are steaming,
- what you are steaming,
- temp of water to start with
- and whatever else you might be cooking in the bottom
All will effect how long it takes to steam and cook.
As a rule, using cold water to start with, I cook vegies for 20min. If you were just cooking the beans for this recipe without any other vegies they will be cooked quicker so 10 to 15 min should be enough. But everything depends on your own taste of course! I like my vegies to be al dente and on the crunchy side.
Do you have the varoma/steaming cookbook? There is a guide for steaming in the front of that book

Thanks for another VAroma recipe - I might have to find these cookbooks - you have some great recipe ideas.
I tend to use boiling water also to speed up the process, but when I write recipes for the TMX I will usually give times for cold water.
