Name of Recipe: Beef sartees with satay noodles & vegies
Number of People: Makes 8 skewers and the noodles & vegies serves 3 - 4
Ingredients:4 pieces of fillet steak cut into 3cm cubes - I got 37 cubes of meat from my steak.
I used 4 x 16cm & 4 x 18cm metal skewers as they fit into the varoma perfectly.
Marinade -
1 tblspn veg or peanut oil
1 tspn curry powder
1 clove crushed garlic
1/2 tspn chopped ginger (jar variety works fine if you don't have fresh)
1/4 chilli, chopped finely
1/2 tspn sugar
60g salt reduced soy sauce
Combine all the marinade ingredients, add the diced steak and marinate for at least 2 hours. Overnight is fine. Turn the leakproof container over every now and then to evenly marinate the meat. When you are ready to prepare the meal, place 4 or 5 pieces of meat on each skewer, place half the skewers in the varoma dish and the other half in the varoma tray. Set the varoma aside. Discard the excess marinade.
Next make the satay sauce for the vegies & noodles. This can also be done well in advance or the day before.
Satay sauce & vegetables (I used Jerjill's recipe as a guide here
http://www.forumthermomix.com/index.php?topic=4098.0)
Sauce ingredients -
90g chunky peanut butter
60mls soy sauce
55g brown sugar
2 tblspns lemon juice
2 tblspns water
Place all sauce ingredients into the TM bowl and cook for
4 mins/90o/speed 1. Set aside until ready to use. Refrigerate if necessary.
Vegies - I had a crisper cleanout so used a bit of this and a bit of that - make your own combinations. These can be chopped up in advance, even the day beforehand (by hand is better for this type of Asian dish).
1 - 2 tblspns vegetable or peanut oil
1/2 red pepper, 1 cm slices
l large stalk celery, sliced on the diagonal 1cm thick
4 green beans sliced
1/2 large carrot cut into 1/2 cm batons
1/4 red onion, sliced 1cm thick
kernels from 1/2 cob of corn
150g shredded cabbage
7-10 snow peas, sliced in half lengthways.
Noodles -
1.2 litres boiling water
1 x 90g bundle Organic Udon Noodles or Soba noodles (for 2-3 serves) 2 x 90g pkts for 3-4 serves)
Preparation to finally bring the meal together:Place the boiling water in the TM bowl, add the noodles. Place the varoma & tray with the sartees on top of the TM bowl.
Set the machine for
8 mins/varoma temp/reverse/speed 1.Remove the varoma & tray and cook the noodles for a further
2 mins/varoma temp/reverse/speed 1.Place the noodles in a sieve and rinse with hot water. Place in the thermosaver and put the sartee skewers on top to keep warm whilst you cook the vegies.
Heat the oil in the TM bowl for
3 mins/varoma temp/speed 1.
Add all the prepared vegies except the snow peas and cook for
7 mins/varoma temp/reverse/speed 2.Add the snowpeas and 110g of the satay sauce and cook for
2 mins/varoma temp/reverse/speed 2.Remove the beef sartees from the thermoserver and toss the vegies and sauce through the noodles. Place the beef sartees back into the thermosaver.
Heat the remaining satay sauce in the TM bowl for 1 min/100
ospeed 1.
Use this to pour over the beef sartees once plated up.
Photos:Tips/Hints:This recipe seems complicated but it is very quick if you have everything ready to go.
To simplify matters these are the steps you need to take in the preparation of this meal.
1) Prepare the beef sartees and refrigerate to marinate.
2) Make the satay sauce and set aside.
3) Prepare the vegies
4) Cook the noodles and steam the sartees at the same time. Place in the Thermosaver to rest.
5) Stir fry the vegies, add the noodles and prepared sauce.
6) Plate up and enjoy!
Thanks Jerjill, hope you don't mind me using your satay chicken noodle recipe as inspiration for this meal.
The beef sartees were very popular at the sunset markets held in Darwin back in the 70's and somehow I managed to get the recipe to bring home with me.
Bubbles: I had fresh noodles so I just put them straight in the thermoserver & once the beef was done poured boiling water in & let them sit (with beef in varoma on top) until veggies were done. After 8 mins my beef wasn't done, so cooked it for another 3-4 minutes, but next time I will try just the 8 mins, because I think it kept cooking a little whilst sitting over the thermoserver.
