Banana Yoghurt Muffin

Banana Yoghurt Muffin

Perfect for lunch box, picnic, morning tea, you name it.   Adapting this from the recipe in www.taste.com.au

Made 30 mini muffin

Ingredients

    * 1 3/4 cups self-raising flour
    * 1/2 cup caster sugar
    * 1 cup natural yoghurt
    * 1 egg
    * 2/3 cup vegetable oil
    * 2 large bananas, cut in quarter


Method


   1.       Preheat oven to 180°C. Lightly grease a 24-hole mini muffin pan.
   2.       Put  yoghurt, egg, oil and  banana in  *:  Mixed at speed 4 for 6 seconds.  Add flour and sugar, mixed at speed 4 for 4 seconds or until mixed.
   3.       Spoon mixture into muffin holes. Bake for 20 to 25 minutes or until a skewer inserted into the centre comes out clean.
   4.      Stand muffins in pan for 5 minutes. Turn onto a wire rack to cool completely. Serve warm or cold.

Nighteyes fitz - I used Gluten Free Self Raising Flour (Macro Brand) so they are soy free too.

280 grams yoghurt
120g oil
90g sugar
290g gluten free S/R flour

They came out perfectly.
