Coconut Flour

Just curious if anyone has made their own Coconut Flour just by putting shredded coconut or desiccated coconut into the TMX and ground it to flour type consistency??

I'm considering doing this instead of buying the flour as it is really expensive.

I've made desiccated coconut from coconut flakes, so I don't see why you couldn't go one step further and make flour. 10 seconds at speed 8-9 should do it I would expect.

Do you have any good recipes using coconut flour jessiesgirl? I bought a packet ages ago and haven't got around to using it yet!

i find it really hard to cook with i - it's very dry and strong in flavour. i only use small amounts mixed with other flours after my first try which was a recipe that used only coocnut flour and was nearly inedible (IMO)

I've not used coconut flour at all, I'm curious though to see how things turn out and if it's something we'll all enjoy

Here's a how-to make coconut flour webpage and in it it says 'coconut flour cannot be substituted cup for cup with wheat flour as the resulting texture of the baked goods is far too dense'.

I have been baking with coconut flour for a few years now, I don't eat any grains so it is great for us.  It lends itself very well to sweet cake/muffin/pancake recipes well but you can't just sub it into a recipe instead of other flours  -  it will be a disaster! You need to have a proper coconut flour recipe to start I think.
Coconut flour is very, very thirsty flour and also, it doesn't have anything to bind it with and so it needs loads of eggs in the recipe.
There is heaps of recipes using it at www.simplycoconut.com
And saying that, I am about to make coconut pancakes for the family for breakfast!  With blueberries and pure maple syrup, yum!

You cannot make your own coconut flour from coconut.  Coconut flour you buy from the shops is de-fatted.  If you ground coconut finely you would end up with finely ground coconut which is not the same as coconut flour as you haven't removed the fat. 

As regards the cost it doesn't work out as expensive as it looks as coconut flour bulks up an awful lot in cooking/baking (this is why you need specialist coconut flour recipes.  Hope this helps.

You can find out how to make coconut flour step by step here. If you can open a coconut and extract the meat, you won't have any difficulties making coconut flour  ;)
