Luigi's 40 second cookies
« on: March 20, 2011, 04:00:42 am »
Have had my TM for about 2 weeks and my wife is over the moon because I now do all the cooking.
My grandkids love the cakes and cookies I make and all is good.

Made Luigi's cookies three times  and they go like hot cakes. Made the Chocolate/hazlenut spread which was very messy, taking the skin off the nuts. Decided to join the biscuits with the spread but it was far too soft and I thought it was a failed effort. However found the spread had hardened in the fridge today (the next day)and I have joined the cookies  with the spread and they are sensational.
Making great 5 seed bread and the yoghurt is fantistic, thick and creamy.Have to make two lots of 2 litres a week to keep up with demand.

Really appreciate all of your posts. Thanks for the obvious online fellowship.

I'm sure everyone is happy you have a Thermomix.

Try the sticky date pudding in the Every day Cook Book.  It will make you a star!  Although I'd pick a better sauce recipe without so much butter as I find it separates too easily.  Let me know if you want the one I use.

dingdonny, it sounds as if you are cooking for the joy of it but are lucky enough to have grandchildren visiting often enough to help with the eating.

Welcome dingdonny. What have you been making lately?

I have to mix for way longer than it says in the recipe, so they are not 40 sec for me! but still very yummy!

Yes I discovered that, the mixing time is not nearly enough. after the initial mix  I scrape down the mix from the sides and gently fold it in with spatula then mix for what ends up to be double the time..End result is super cookies, especially with the hazelnut/chocolate spread in the centre joining two together.Ration ourselves to one each a day though.
Does anybody else find the orange cake too dry? My wife feels that TM cake mixing is not as good as her old method with mixmaster. She thinks that somehow the TM process results in dry cake mixtures..
We enjoy  the five seed bread , especially toasted.
Have a great Easter .

Donny try mixing your cake mixes with the butterfly in and on speed 4 max, and for a little less time and see how that goes

Thanks faffa, instructions say don't use butterfly for cake mixes so wouldn't have thought of that. Will give it a go.
