Rosquillas cordobesas (Spanish recipe)
« on: March 25, 2011, 11:48:09 pm »
Well here goes my first recipe in the forum, I hope its not already there I found it in a Spanish TM forum see link to the original: http://www.recetario.es/receitas/9215/rosquillas-tipicas-cordobesas.html posted by Jacaranda.
I'm a newbie with the TM and I've done them 3 times so far (everyone loves them at home even my 2yr old son!) really easy to make and don't take much time.

they are not really bread, and they are fried not baked but they are sold in the bakeries in Spain, feel free to move it if it's in the wrong place :)

Name of Recipe: Rosquillas cordobesas
Number of People: makes about 25
Ingredients:
330 g of flour
1 egg
120 g sugar
55 g orange juice
80 g of olive oil
lemon zest (recipe says of 1 full lemon but I find that half is enough)
10 g baking powder

olive oil to fry them
sugar and cinnamon to cover them after(to taste)

Preparation:
Add the egg and sugar 1 min 30 sec  37 degrees, speed 3 1/2.
Mix the flour and baking powder in a separate bowl
Add the orange juice and lemon zest. 1 min  speed 3 1/2 during this time add the flour and baking powder little by little so it mixes well with all the other ingredients
Add the oil 2 min speed ::
Make little portions of about 30g and make a hole in the middle with your finger

Heat up the oil only a bit, they burn easily!  I recommend using a very mild olive oil or if you prefer sunflower oil, do not use extra virgin olive oil... taste is way too strong.

Once fried put them in kitchen paper to soak the excess oil and before they are cold cover them with the sugar and cinnamon mix.

Photos:

Tips/Hints: the dough is sticky so its a bit hard to work with, I generally cover my hands in oil and that helps but still not easy... not sure if anyone has any suggestions on how to help with this? I tried adding more flour to the recipe but the Rosquillas just don't turn out as nice so I guess that's not an option for me!

They are really easy to burn or under cook, it took me a couple of attempts to get it right!!

Good luck and I hope you enjoy it as much as we do!! :D

PS - sorry for the grammar mistakes and basic vocabulary, I'm still getting used to translating recipes but learning a bit everyday! if there are any changes to the recipe you think would make it easier to understand let me know and I'll amend it, any help is welcome!  :D

Thanks for your first recipe Syberia. Your English is fine by the way.  We have one from Portugal (isi's) for a donut machine but yours is different so no problems there.

They look delicious Syberia.
May all dairy items in your fridge be of questionable vintage.

Thanks Syberia they look wonderful.   Your English is excellent and it's really easy to follow your recipe.

Unfortunately I don't think I'll be making these for a while as I'm trying desperately to avoid eating sweet things.   But maybe when we next have guests, I'll try them out.
