Good Fruit and nut cake recipe please.

Hi,
First post and have just acquired a TMX. I am looking for a good quality fruit and nut cake recipe. I eat it whilst training (road cyclist) to keep my energy levels up. However have now run out of the numerous cakes i purchased around christmas time.

The recipe i am wanting is to be quite heavy, packed with lots of fruit and nuts.

If anyone has any suggestions or links it would be appreciated.

Welcome gogo419!!! I'm not sure if this is what your looking for but I love the 'weight watches' mocha fruit cake. It is easy as and you don't really need Thermie for it.
Soak 1kg mixed dried fruit overnight in 2 cups black strong coffee.
Mix in 150g fruit and nut chocolate chopped roughly and 2 cups SR flour.
Cook in 180oC oven for 2 hours or until cooked.
It is really yummy.  ;)

Nutty Milo Slice with Homemade Milo is pretty good, and might be something that you could try.

Hi Julian, welcome to the forum.  Nice to see a man who likes fruit cake - I don't know any others.

You will find plenty around, here's Chookies pineapple cake, here is one from Joy's blog, Chelsea's wholesome fruit & nut cake is here and Andie's Heirloom cake here.

someone coverted my mum's recipe too, though i can't remember who - it's on here i'm sure!

Welcome to the forum Julian. I hope you find what you're after in all the suggestions. Perhaps you could even 'blitz' some nuts in the TMX. Then blend whatever fruit you wanted and combine the two. If you had more fruit than nuts I would imagine that it would probably stick together fairly well. You could even add a little honey for that extra boost.
May all dairy items in your fridge be of questionable vintage.
