Best way to store quince paste

I have read that you should dry it out for a few days or bake it on the lowest oven setting for 1 ½ hours before wrapping in baking paper and foil

True or false

No idea, but I'd like to know - someone gave me some recently and it has crystalised.

I stored mine in the fridge last year. But I only had a small amount.
May all dairy items in your fridge be of questionable vintage.

fundj, I simply let them chill for several hours in the lightly oiled texas muffin pans, unmould, then wrap them in greaseproof paper, then a layer of foil. 
Luckily I have a large fridge outside, so I have just stored them in an open container in the chiller section.  I'm sure any part of the fridge is fine.
Have just used up the final paste from last years batch, and it was as good as it was made fresh.

I love your  fancy shaped pastes too  :)

I keep mine in a Tupperware in the fridge - in UK probably cool enough in the larder but here in sunny South Africa I played safe and kept in fridge.

I just keep mine in the pantry wrapped in greaseproof paper and then in a click lock plastic bag.  It keeps the same as a jar of jam would.  I found if I kept it in the fridge it crystallises.

I have some from last year,  and it is fine.  I pour it into small plastic containers or vacuum seal it in small blocks and store it in the pantry.
