Sorry Chelsea I leave mine in the pantry  ??? Not the fridge

I have added that to the recipe, but maybe it does need more coconut oil. I will look at mine now.

I am sure you could use a neutral oil like grape seed or rice bran. Coconut oil is good for you though, so given the choice I would go for coconut oil  ;)

do you think copha would work (is it coconut oil or something like that?) I just have no idea where to buy coconut oil and have never heard of it?

Mel, here is a thread about coconut oil - your answers may be in there.

Copha is coconut oil with added lecithin, so you could use it. I'd use 1/2 ricebran or grapeseed oil and 1/2 coconut instead perhaps.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Hi mel81q. If I remember correctly, you are in the Sydney Hills district. Coconut oil is available at the health food shop at Castle Towers. I bought some there to try this out, but the next thing I make in the thermie is going to be the BHG lemon, ginger honey drink (sniff).

Thanks Meagan.  I will try it again soon as the boys loved it when first made.   :)

Meagan, I'm having a few 'like/dislike' thoughts about you right now!  ;)
We made this tonight and ... "it was epic" (15 year old daughter) "mmmmmm" (husband) "mfgrbmfp" (10 year old daughter - only because she was almost licking her bowl out and couldn't really say anything!) and I agreed with all of them!
But we dislike you (in the nicest possible way!)  because it was too yummy and that batch is all gone and we'll have to make more. Thank goodness we ran out of ice cream!
Definitely a keeper.
Thankyou for sharing.  :D

I made some of this today to go with the tenina's salted caramel icecream i made the other day. Yum!

I just wanted to know is it ok to double this recipe and how about if i used all of a 200g block of cooking choc (200g) instead of just 150g. Will it still work?

I would put a bit more oil in to compensate for the extra chocolate.

We use to put ice magic in the microwave for 10 secs or so if it was firm from the pantry. That should be doable here too. I think I might have to try this this week... As well as a new batch of icecream. Yummy!
