Quinoa porridge

This recipe was based on one at http://www.savvyvegetarian.com/vegetarian-recipes/quinoa-for-breakfast.php

Quinoa porridge (serves 2)

Ingredients:
1/4 cup rinsed quinoa
1/2 cup water
2 tbsp sunflower seeds, pumpkin seeds, or slivered almonds (softer & sweeter when soaked overnight)
2 tbsp sultanas
2 tbsp chopped dried apricots
1/4 tsp salt
1/2 tsp cinnamon
1 cup milk (original recipe suggests almond, hemp or soy milk, flavored or plain) - add more as needed

Method:
Place all ingredients into TMX bowl.
Cook at 100 degrees, 15 mins, speed 1.
Scrape down sides of bowl.
Chop/mix for 5 seconds on speed 6.
Serve.

Yummy!

As part of the challenge, I found this unreviewed recipe.  I soaked all the ingredients (except the milk) overnight in the Thermomix bowl then just had to add the milk and set the timer this morning whilst I did other chores. 

I didn't have quite enough quinoa so made the quantity up with chia seeds.  It was sweet enough without having to add any other sweetener and from this recipe for 2 serves I will get 3.

Thanks Kerryn, it's certainly a different breakfast but I did enjoy it once I got used to the crunch and having to chew a lot longer than I normally do  ;D

I love quinoa so I will try and remember to put it in the bowl tonight. Thanks.
May all dairy items in your fridge be of questionable vintage.
