My favourtie meal is risotto, in any shape or form, but I love wild mushroom risotto. I have made the one in the EDC book, its nice but to me quite bland.

I am going to make one this week with home made liquid chicken stock, porcini and Swiss brown mushrooms and also going to use some white truffle oil.

Does anyone have any other suggestions?

Maddys red curry chicken delish just be careful with the red curry paste I use 2 tablespoons (I use Ayam red curry paste) Maddy uses the one from Aldi it is not as hot. Lovely flavour everyone loves it. Thanks Maddy.

I love Kathryn's pumpkin and feta risotto. In fact we're having it tonight. We had a roast last night and I roasted heaps of extra pumpkin.
I love a seafood one too. I'm not sure if I've posted that recipe. Will have to check.
May all dairy items in your fridge be of questionable vintage.

Have never thought of a curry risotto - sounds like a good plan, will def give that one a go

I also like the sound of pumpkin and feta, not so keen on fish or seafood as I have an allergy so tend not to cook anything from the sea.

2 different risottos to try - thanks again
