Hedgehog slice, tried and tested?

Something I can never get right, Hedgehog slice. I am desperately craving it with this pregnancy  8)

Happy if it's non thermomix too  :D

That's no good LeeJ, we need to find you a good recipe to fix those cravings  :D :D

How's this one from Best Recipes sound, easy enough to make in the TMX too I would think.

I had to look up what hedgehog slice was :D :D, we add raisins and call it Tiffin Cake here in the UK. ;) ;D

Haven't made this for years and years, but this is the recipe I use:

HEDGEHOG SLICE

Bring to boil:
125g butter or margarine
190g sugar
1 tablespoon cocoa

Add to:
¾ pkt arrowroot biscuits (crushed, but not too finely)
½  cup mixed fruit
1/4 cup desiccated coconut
1 egg
1-2 drops peppermint oil (to taste)

Put into flat tray. While mixture is still warm cover with chocolate icing. Refrigerate until set, then cut into individual biscuits.

It came from my friend, Cathy, therefore it's Cathy's Hedgehog Slice

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

This is my Gran's recipe - sorry, not yet converted.

110g butter
250g Marie biscuits (whole pkt if Westons, weigh if Arnotts), crushed
1/2 cup sugar
3/4 cup chopped walnuts
1 egg
2tbs cocoa
Dash of vanilla

Put butter & sugar in saucepan, bring to boil.  Add cocoa & vanilla.  Remove from stove, add lightly beaten egg, stirring all the time.
Put walnuts & biscuits in bowl, mix. Add cocoa mix & stir.
Press into greased log tin & put in refrigerator to set.
Ice with chocolate, lemon icing and sprinkle with more chopped walnuts or with coconut.  Slice & serve and enjoy!

Choc icing:
Mix together 1tbs butter, 1 tbs cocoa, splash of lemon juice, icing sugar & a bit of milk to soften. Sorry, it's trial and error for the icing as I dont have quantities and haven't made it for a while.
