pretty much lexi...just mincing it fine but not overdoing it either (so def not puree) and adding breadcrumbs usually or something similar into the mix and an egg, seasoning then rolling into logs  :)

I normally use bought (butcher's) sausage mince and add fresh breadcrumbs, tomato sauce, fresh herbs and an egg, but I have made my own from mince. Just pop in the mince with double the amount breadcrumbs and add lots of salt and pepper, then add the remaining extras.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

Yeah I have to be careful what they put in it with sensitive kids like mine.  will try mincing it myself then, as if it's too chunky they wont eat it.  The butcher looked at me queer when I asked what was in the sausage mince, I suppose it's trade secret lol.

they dont like sharing anything lexi...we tried asking certain butchers about sausages for our local butcher in france who kindly said he would make us beef sausages if we told him what was in them but they dont like telling...i think the fact that they are so competitive between themselves they dont want to release any info..i guess its best to make your own anyway and just mince it to your liking but dont forget to season it and add a binding ingredient like egg or breadcrumbs etc :)

I found a recipe for Chorizo on Hugh Fearnley-Whittingstall website.Maybe a bit spicy for your kids Lexi but you might get an idea about proportions. :)

We do have replay in UK  ;D there are many River Cottage episodes to view - however I am unsure if you can view it outside of the country - but it's worth having a try?:

I found a chorizo & cabbage soup recipe from the link you posted CC so I think it is just a matter of putting Chorizo in the search box on his site and anything he or contributors to the site have made should come up for you.

Thanks I just remembered one of my friends, her brother is a butcher or used to be so might go pick his brains.

Would you like me to tell you if I find out?
