Cathy's Hedgehog Slice
« on: May 28, 2011, 08:12:39 am »
I've just made this in the TMX and it was so easy. I haven't made it for so long, the last time I did, BT (Before Thermomix) I crushed the bickies with a rolling pin!

Cathy's Hedgehog Slice
125g plain sweet biscuits
1/2 cup hazelnuts (I used all hazelnuts)
1/2 cup pecans

Break up biscuits and place in  *: with the nuts
Crush into pieces on speed 4-5 for a couple of seconds at a time. Tip into a bowl.
Mix in 1/2 cup glace cherries, halved.

200g marshmallows (I use pink and white)
1 tbsp water
90g butter
200g dark chocolate

Combine and heat on 90, speed 1 (increase to 2 as it begins to melt) for 6 minutes or until all melted.
Add to bowl with biscuit mix and stir together.
Pour into a (plastic wrap) lined 26 x 8cm tin or plastic container and refrigerate until set.
Can sprinkle with coconut if desired, but I prefer it as is.

A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

I love this. We call it chocolate biscuit cake. I was first introduced to it at boarding school in the dim dark ages.
May all dairy items in your fridge be of questionable vintage.
