Fluffy Rolls (with photo)

230g milk
75g butter (softened)
20g fresh yeast
20g sugar
500g bread flour
10-15g salt (*)
1 small egg
1 tbsp milk
Sesame, poppy seeds, anise seeds ...etc


    * Put milk, butter, yeast and sugar in TM Bowl. Mix for 30 seconds on Speed 5
    * Sift in flour. Add salt. Mix for 30 seconds on Speed 6
    * Knead for 3 minutes
    * Let it rise in TM Bowl for 1 hour (Or transfer it into a deep bowl and cover with plastic film)


    * Get approx 85g pieces, roll into a ball shape, place in a baking paper covered tray. Flatten them a bit by pressing with your palm. Cover with a tea towel. Let them rise for 1 hour


    * Beat egg and milk. Brush rolls with it. Sprinkle with sesame, poppy seeds etc
    * Bake in preheated oven at 180ºC for 20 minutes

(*)  The salt amount in the original recipe was indicated as 20g, however I thought 20g of salt would be too much for this dough so I reduced it to 15g. It resulted saltier than my usual bread or roll recipes, yet it wasn't oversalted and I liked it. If you don't like salt much, I'd recommend you to use 10g. In my opinion 20g is too much!


Adapted with a few changes from Soffici Panini ai Semi recipe in the book named Il Buon Profumo del Pane.

You get 10 rolls with this recipe.

They look lovely farfallina - each one the same size as the others.  Wish mine were as even as that when I make a batch of rolls  :-))

Thanks farfallina I'll try these. I love rolls with my soup-although my hips don't. ;)
May all dairy items in your fridge be of questionable vintage.

Well girls,.... I am done with bread! I can't take it, make it anymore!  :o
I stopped making bread since a while because thanks to endless kinds of wonderful fresh bread easily made with TM I put on a few kgs!!  :'(
It was my fault as I exaggerated and prepared bread almost every day so can't put the blame on anyone but me!! :)

Cookie I hope you like them when you try ;)

JD about sizing I am not that good in fact
I have a small kitchen scale and i am weighing each roll, that's why they look even  :D

JD you can also use your TM to weigh your dough. Bakers do this (weighing) when learning to bake then eventually they just feel the weight of the dough accurately.

I made these today  :) I was worried to start with as the ought came out really crumbly but the end result was okay. A bit heavey for my liking but still nice  :)

It's been a while since I made these but I don't remember it being crumbly DeeCat. It might be the flour perhaps?
I might be remembering wrong anyway. Next time I make them let me check it out again.
I am glad they turned out ok.. acceptable at least ;)

i made these today and was impressed by how they turned out! soft and fluffy as described! and only slightly sweet.

I experimented with the shape making rosettes as per a link here on the foru. Here are the results:
