Persimmon Sorbet

Name of Recipe:  Persimmon Sorbet
Number of People: 4 greedy ones!
Ingredients: 400g persimmon flesh (4 to 5 very ripe persimmons)
                           40g raw sugar
                           60g lime juice
                           1 egg white
                           400g ice
                       
Preparation: place sugar into bowl and mill for 10s on speed 9.
Add persimmon flesh, lime juice, egg white and ice and slowly turn the speed dial to speed 10- mix for 1mn.  enjoy!

Persimmons are soft and sweet:  ideal to make sorbet.

Now - how come I've let some of my lovely persimmon's go to the chook bin and didn't think of this!! Good idea - although it is freezing cold here at the moment - that might be why sorbets were far from my mind but I think there is enough sun out today to give this ago.  ;)

Persimmons are my most favourite fruit in the world Carine - I just love to eat them as they are. I'll have to keep an eye out for some very ripe ones (they seem to take so long to ripen if you buy them firm) and freeze the flesh to try when summer returns.

Yes Nay-nay, my chooks love persimmons too!  It's freezing in Tamworth too but my 2 growing boys love their sorbet regardless of the weather :D  Yesterday I tried to make a persimmon cake which turned out a bit like a pumpkin pie- not quite right.  If you have any other recipes using persimmons I'm a taker!!

We're lucky to have a persimmon tree (astringent variety- soft and sweet when fully mature). Apparently if you put a banana or a apple in the same bag as your persimmons it helps these to ripen...  You could maybe try this.

It is a wonder the green is not reflecting onto the screen - I absolutely love persimmons!  We always had a tree when I was growing up but I could count the number of times on one hand  :(  :(  :(  I have had one since.  This sorbet sounds soooooooooo delicious, Carine!!!!!!!!!

Johnro, we had a glut of persimmons this year and even though we love them and have given full boxes away to friends I'll be glad to move onto the next fruits that rippen in our orchard (oranges and lemonades!). Shame you're not close by :-\  I'm sending you a pic of our persimmons:  clumped like grapes on a branch!

Wow! Our tree wasn't quite as loaded as that! It is a battle to get our share before the birds. Thanks for that link JD I made the Persimmon muffins yesterday and they turned out scrummy.  ;)

That was quick Nay-nay but I guess if you have a tree, not so surprising ;)
I bought myself 10 of these little babies today - cheap @ $3.99 a kg but whether I have the willpower to keep some for anything other than plain eating remains to be seen  :-))
