Ricotta, Tomato and Spinach Frittata

Ricotta, Tomato and Spinach Frittata:
Number of People 4:
Ingredients:
1 tablespoon EVOO
1 large onion
300g cherry tomatoes
100g spinach
100g ricotta
6 eggs

Preparation:
Heat oven to 2000.
Chop onion in Thermomix.
Heat oil in a frypan and add onion. Cook until soft, then add tomatoes and toss for about a minute until soft.
Remove from the heat and add the spinach and allow to wilt.
Place all this in a large quiche dish or similar.
Put dots of ricotta over the mix. I made Helene's ricotta for this recipe.
Place eggs into the  *:, season and mix well, Pour over the ricotta etc.
Bake for about 20-25 minutes.

Lovely and simple Cookie  :)  love frittata's.....always great for the bits hanging around the fridge too.
As for making the ricotta  8) thanks for posting Helene's link!  :-*
I don't know how I missed making ricotta  :-\ but I use it all the time, and I am always dashing out buying the stuff!
Do you use muslin cloth for straining cookie?
I can't wait to make it now, for Donna Hays baked cheesecake  :-*

Yes Maddy I do use muslin. I have eaten all the leftover Ricotta. It is really tasty.
