Oat Rockies from The West Australian (converted)

Oat Rockies
Servesapprox 30
Ingredients
120g soft butter
120g brown sugar
1 egg
1 teaspoon vanilla extract
180g SR flour
75g rolled oats
30g shredded coconut
85g sultanas or cranberries
120g dark choc chips

Preheat oven to 1800.
Cream butter and sugar  Speed 3, 25 seconds.
Scrape down and add egg and vanilla.  Speed 4 15 seconds.
Add flour, coconut and oats. :: 22 seconds until combined.
Using  :-:, speed 2/3 add in sultanas and choc chips. Approx 13 seconds.
Place on trays and bake for 10-15 minutes.

Chelsea - These mixed up beautifully and are very yummy.  Another family favourite I am sure. Thanks Cookie!  We really love these.

KatrnH -  the 2 boys decided they wanted to cook.  So DS4 and DS2 made these (with only a little help from me). A good chunk of the dough got eaten raw and the rest got rolled into very weird looking shaped biscuits - but they are delicious and the boys are so proud of them!  A very forgiving recipe.

Amy - I used Nuttelex instead of butter, craisins instead of sultanas and used a mixture of dark and white chocolate chips. Also used desiccated coconut because I didn't have any shredded.They smell amazing and are beautiful biscuits.

mmn mmn I often wonder why people would want to buy a packet of biscuits when they can have something yummy like this, and I find that you have to just keep eating through the packet, whereas homemade biccies you can have one or two and they are more filling. going to give these a go. thanks cookie

Is it SR flour Cookie? I have the ingredients in the bowl ready to mix and just realised that there is no rising agent.  I will throw in a tsp of baking powder in anyway.  :)

Oh Chelsea I'm so sorry. It is SR flour. I'll fix the recipe.  You can also use cranberries instead of sultanas. So much for checking the recipe.

Normally I wouldn't have noticed Cookie, but I was three hours into writing and proof reading school reports.  I was in the zone!

We really love these.  Hubby never takes biscuits to work with him but I noticed him grabbing a couple of these on his way out this morning.  ;D

Ooh reports. I quite understand, when I proof read mine I had to 'get in to that special zone' as I hated handing them in with ANY errors. (before computer reports)

Mum was half-asleep in her chair when SD gave her one, but she was so keen to tell me how good they were that she sent me a text message even though I was just a couple of rooms away in my bedroom :-)) ;D ;D ;D
