What's your favourite quiche filling?

I seem to always come back to the classic quiche Lorraine filling (eggs, cream, onion, bacon & Swiss cheese). Our family also love quiche with salmon and greens, or roasted capsicums, tomatoes & goat cheese...  What's your favourite?

Roasted baby tomatoes and spinach. Often some leftovers from the fridge so that I can present them in another way. Zucchini is another great one.
May all dairy items in your fridge be of questionable vintage.

Here are some ideas from an earlier posting.

Beringamababe's Chicken & Macadamia is my favourite gourmet quiche and Chookies My Favourite Quiche is my favourite everyday one.

My favorite is lobster/mushroom/leek quiche.  Made with cooked lobster (or lump crabmeat) oyster mushrooms (or chanterelles) and sauteed leeks (or shallots or even scallions).

That would probably be my favourite too andie but unfortunately won't be trying it with the price of lobster crayfish. When I do manage to buy some crayfish, I just want to eat it as it is.  :D :D

Me too Judy. I was having a clean out this morning of some old recipes I had collected from magazines and I came across a quiche recipe that simply used all the bits of cheese you had in the fridge. I might give it a try this week as I have a tiny bit of ricotta, some fetta, some garlic and herb cheese as well as cheddar.
May all dairy items in your fridge be of questionable vintage.

That sounds great Cookie. I often entertain and am usually left with a mix of cheeses and nothing to do with them but eat them (not great for the waistline). Let us know how you go and maybe you could share the recipe!!!!!

I thought of you the other day andie. I was making JD's Chicken and Vegie soup and the 1/2 leek I had was really really sad looking, but your words "I never waste anything" sprang to mind, and instead of running to the shop I threw it in - beautiful! you would never have known  ;)

Carine I was just looking at the BBC Good Food site (one of my favourites) and I saw this. It may give you some more quiche ideas and the recipes.

Twitterpated here is the recipe for the Cheeseboard quiche. I plan to make it this week and will convert it then. It shouldn't be too hard.

Thanks for the BBC Good Food link Cookie:  one more for the recipe folder in my favourite  ;)
And, yes, quiches are a great way to use a few different cheeses- a creamy blue cheese pasta isn't bad either..., followed by a salad to aid digestion and ease the guilty conscience!  :D

I cannot make a quiche without roasted baby tomatoes and asparagus. I usually add whatever else I have available as well. Usually feta, ham, bacon, onion, leek, spring onion or whatever else I need to use up. I love the fact you can add pretty much anything into a quiche and then thats lunch for work for a couple of days for me and hubby!
