One of my favourite dishes is the Thai Chicken Curry from the EDC - I change the colour of the paste at whim - green is the flavour of the month at the moment - and play around with the added vegetables.  I'd be lost without my fresh kaffir leaves - have two trees in pots.  Now, thanks to the forum, I understand that I can use the fruit as well . . . something I was not aware of - and to think I've tossed a lot of fruit over the years!  :'( :'(

I love kaffir limes.
I just go pick the limes, and leaves from next door when I need them.

I have a big box of bush lemons off my tree today.

Oh, Oh, Oh, I didn't realise the actual fruit is okay to use  :-)) Do you just use them in the same way as 'normal' limes  ???  :D

It felt so good picking off a bay leaf a couple of mins ago to add to what I'm cooking, thrilled much!  ;D

There's certainly not a great deal of juice but the zest packs quite a taste punch in Thai curries, etc.

My wonderful DH gave me some money to buy something special. Instructions "Do not spend on DS, DH or the house. Must be something special to remember my Dad".

Off to the jewellers I went and purchased a new diamond ring LOL. Just waiting for it to be resized.
