2 eggs
120 g castor sugar
110 g butter or margarine (room temperature)
250 g mashed banana (I used thawed frozen bananas)
1 orange
80 - 100g dried fruit medley
350 g self raising flour
Icing sugar and extra orange for icing.
Preheat oven to 180oC.
Spray and line a 20cm cake tin.
Peel and cut orange into 4 pieces, place in the TM bowl and chop 3 sec/speed 5. Set aside.
Without cleaning the bowl, put the butterfly in place and leave it there until the mixture is completed.
Add the eggs and castor sugar. Beat 3 mins/37o/speed 4/MC off.
Add butter or margarine and mix 30 sec/speed 4.
Add mashed banana and orange pulp with juice. Mix 10 sec/speed 4.
In a separate bowl, sift the flour over the fruit medley and make sure the fruit is well coated with the flour - use your fingers.
Add this to the TM bowl and mix 10 sec/speed 4.
Pour into the prepared tin and bake 40 - 45 mins. Test with a skewer, if it comes out clean, it is ready.
I baked it in the lower third of an electric oven.
Remove cake from the tin and place on a cooling rack.
When completely cool, ice with a mixture of approx 1/2 cup sifted icing sugar, 1 tsp orange zest and enough orange juice to make a paste.
