Sun-dried tomato mayonaise
« on: August 07, 2011, 10:43:45 am »
Yesterday I saw that (Quirkycooking) Jo was looking for the recipe of sun-dried tomato mayonaise from the Festive cookbook on Facebook.
The recipe looked very appealing (just made it) and I can imagine that many people in Europe (myself included) cannot get this cookbook here. So I copied the recipe from Facebook. Thanks a lot (and happy anniversary!), Jo!

Ingredients:
1 clove garlic
1 twig rosemary
40 gr sun-dried tomatoes
1 tbs balsamic vinegar
2 egg yolks
200 gr coldpressed unflavoured oil (I used grapeseed oil)
1 ts seeded mustard
Juice of 1 lemon
Pinch seasalt

Place seasalt, rosemary and garlic in bowl, 5 seconds speed 7.
Add yolks, mustard and vinegar, 1 minute speed 5
Add sun-dried tomatoes, 30 seconds speed 6.
With blades on, speed 4, slowly add oil through hole in lid, mc on. This takes 2 to 3 minutes.
Add lemon juice to taste.

Enjoy!
