Jelly Cheese Cake slice

Jelly Cheese Cake Slice

125g milk Coffee Biscuits
80g Butter melted
375g cream cheese
1/2 cup sugar
1 tsp vanilla essence
200ml cream
2 Tbs boiling water
2 teaspoons powdered gelatine
85g packet jelly crystals



place butter in TM bowl and melt 2 minutes, 60 degrees speed 1 then set aside (or could zap in microwave)
Place biscuits in TM (no need to clean) and press turbo a few times until all biscuits are crushed.
pour melted butter back in TM bowl with crushed biscuits and mix 10 sec speed 3 until well combined.
place biscuit mix in lined slice tray and press down with the back of a spoon, refrigerate.
clean and dry TM bowl.
place sugar in TM and mix 10 sec speed 7, add cream cheese and vanilla and mix 20 sec speed 4, scrap down sides.
Add cream and mix further 20 sec speed 4 until well combined.
in a separate bowl combine boiling water and gelatine and mix until gelatine has dissolved.
set TM to 30 sec speed 4 then add gelatine mixture through the lid.
Pour mixture over biscuit base in slice tin, refrigerate for 3-4 hours.
Mean while make jelly as directions on pack and set aside to cool (Don't let it set) when jelly is cooled but not set pour over top of cheese cake mix in slice tray return to fridge until completely set, slice and enjoy.

cattro - Thank you so much for this recipe i made it last Sunday and took some to work they loved it.  I loved it nearly ate it all to myself this is a winner.  And I was so proud it worked.

JD - some recipes melt the butter then add the biscuits and process them.  Others add the unmelted butter and biscuits in together and do it that way.   So looks like anything goes until you get the desired look.

We have Lady Flo's jelly slice here in this thread using condensed milk but this is different with the cream cheese. Thanks Mandi , nice to have a choice when making this old fashioned favourite.

lol Bedlam, My head just isn't with it today. Yes there is supposed to be cream cheese in it. I will fix it now. I'm feeling better but a bit dopey.

I made this on Saturday when I was feeling yuck, all was fine until I made the jelly and put 1000mls of boiling water in instead of only 500mls, so I thought I would just add another packet of jelly crystals to the mix but of course I didn't have any more in the cupboard. Then I thought I would just go to the shop and get some more but I had workers here on the roof and they were parked behind my car. So then I decided to add some gelatine to the jelly mix to make it set. I walked away and come back to check the jelly and the bloody thing had set already. Grrr. I gave up and waited till the next day to buy some more jelly crystals and started again.

Yeah,we all have times like that.
What you really needed to do was go back to bed. However I guess with 6 hungry mouths to fill + work men,that was impossible.
Glad you are feeling better.
Do you reckon you could just add the biscuits to the melted butter and crumb with the butter in. ( just me being lazy...just wondering)

Ooh I missed this. It looks delicious. I had something similar last week when I was out and it was MMMMMMMMM.
May all dairy items in your fridge be of questionable vintage.
