90th Birthday cake!

Help... I have been lumped  with making my grandmother in laws 90th birthday cake. It has to be made by thursday!! My M.I.L would like me to make a rainbow cake (layers of cake in the colours of the rainbow). But need something that is easy to make   :-\

just use a basic cake mix adding no cacao or other flavourings on here, like the quicker than a packet cake or even the bimby cake minus the cacaomake sure the pans you use are the same size if using more than one and colour the batter as you go for each rainbow layer...then assemble by icing in between each layer and all over..would possibly only a quarter fill the cake tin to not end up with mega layers of cake or waste..should be fairly easy as a rainbow cake is more fiddly and time consuming than anything...you will have to take photos and how wonderful for you to cook a cake for such a special occasion!

cool I made it for my daughters 6th birthday...before thermomix, it took 3 packets to make. It does look great when done just worried it might be a bit childish for her. I also ice with cream cheese in middle and cover in whipped cream!!! will try those recipes to see which works best  :)

dont agree re too childish...if layered and finished properly it can look quite professional and who doesnt like colour  :)

Nope maddy its what the mother in law wants. I am thinking a big sponge cake with cream and strawberries may be the go. I will experiment with a few recipes today to see which turns out the best... can never have too mauch cake to choose from! :D

yeah make what you want to make - cook gets to choose! (just say to MIL you couldn't find a recipe for rainbow cake)

Cream and strawberries sounds perfect Rene.
What is also lovely is sandwiching with cream & strawberries, top the cake with more cream and add fresh rosebuds.
Granny would love it  ;)

I made something for my Mums Birthday recently and she was ecstatic.  It was a gingerfluff sponge, filled with applesauce and cream, cover all over with cream, top with fresh rosebuds, crumbled ginger biscuits, and of course some edible glitter.   Surround with sponge biscuits and tie with a ribbon......along those lines screams Grandma to me  ;)

Maddy that looks great and very grandma ish. Was the ginger sponge and easy cake?  Also was it just homemade applesauce in the middle with the cream? It sounds like an unusual combination but one I think my Dad would like. If you are able to post or pm me the recipe it would be appreciated.

Already had it on file  ;)


Ginger fluff sponge with apple sauce filling  -  (from the crabapple bakery - cupcake book)


What you need for decorating
3 cups whipped cream
1 x 250g packet sponge fingers
1 metre ribbon
6 gingernut biscuits - crushed
fresh roses (make sure they are pesticide free), or maybe use imitation ones.
Icing sugar, for dusting
edible glitter (I used a hologram glitter)



The apple sauce filling
250g granny smith apples, peeled, cored and quartered
juice of 1/2 a lemon
grated zest of 1/2 a lemon
1/2 cup white sugar
1 cinnamon stick
1 teaspoon vanilla extract (not essence)

Toss the apple quarters in the lemon juice and set aside.  Reserve any excess lemon juice.
In a heavy saucepan, combine the reserved lemon juice, zest, sugar, and cinnamon stick.  Heat gently until the sugar has dissolved.
Simmer 2-3 minutes more before adding the apple.
Simmer apples for 10 minutes or until the apple is soft, and the liquid has reduced.
Drain off excess liquid, and place the cooked apples into a bowl, and mix in vanilla.
Remove cinnamon stick, and mash with a fork until smooth.
Allow to cool.


The cake
1/3 cup self raising flour
1/3 cup cornflour
3 teaspoons ground ginger
1 teaspoon ground cinnamon
2 teaspoons cocoa
5 eggs (separated)
3/4 cup castor sugar
1 tablespoon golden syrup


Pre-heat oven to 190c.Grease 2 20cm sponge cake/sandwich cake tins.  (I think I lined the base with greaseproof paper too).
Combine the flours, spices and cocoa by sifting together 3 times.  Set aside.

Using an electric mixer on high speed, beat the egg whites until soft peaks form.
Gradually add the sugar, beating after each addition until dissolved.
Add the egg yolks and golden syrup and beat until well combined.

Using a slotted metal spoon, fold the sifted flour mixture into the egg mixture until just combined.

Divide the mixture evenly between the 2 cake tins.
Bake for 13 minutes, or until the sponges have come away from the sides of tins.
Remove from the tins immediately and cool on wire racks for 30 minutes before filling.


The decorating
Cut tops off each sponge using a bread knife, to create a flat top.

Place one of the sponges onto a silver cake round (or flat plate).  Spread half of the whipped cream over the bottom sponge cake.  I made the outside of ring slightly higher.
Pour the apple sauce over the cream, and spreading it with a small palette knife.
Spread a little more cream over the apple sauce.
Place the second sponge on top.

Using a large palette knife, spread a thin layer of whipped cream over the sides of the sponge.  Stick the sponge fingers like fence pailings, to the sides of the sponge, until completely surrounded.  Tie the ribbon around the cake, making a big bow at the front.

Using the palette knife, spread the remaining whipped cream on top of the sponge.  Sprinkle with the crushed ginger nut biscuits, and decorate with the roses.  Dust with icing sugar and sprinkle with the edible glitter.

wow thanks for that!!! making Mississippi mud cake covered with ganache and she is lucky that one of my magnolia's in in flower atm!!! Made a small test run this morning and is is delish, now to make it a bit bigger  :D.  I will use that ginger fluff sponge recipe I love the idea of Apples as well, maybe I might add a bit of rhubarb with the apple and make it for my birthday. Thanks for all your suggestions and will post pictures when I am finished.  Thanks :)

The monster mississippi mud cake was a big hit, They reckon it was the best they tasted ;D Pretty happy since it was my first try.  Didn't have the heart to tell them it was dead easy with the thermomix.... 6 minutes and it's in the oven  :) Photo will come when I can get one.
