just wondered if anyone else has use issues with cream/coconut milk seperating while cooking sauce dishes, ive noticed it with the chicken chilli and basil, also with the red curry chicken, help!

I haven't had that problem scottymag but you could try adding a little cornflour to stabilize the sauce whilst it's cooking.

i have used the light carnation coconut milk, do you think thats the issue, i ws trying to keep it low fat but maybe the wrong thing to do?

I have had the issue of carnation milk splitting in both thermomix recipes and "ordinary" ones! It is not actually coconut milk, but evaporated milk with coconut flavour added. I dont have this problem when using actual coconut milk. As Cornish cream has suggested, using some cornflour can help, or add the milk towards the end of cooking time. I have also found the taste of the dishes where the sauce of curdled is usually okay, although they may not look so attractive. Another alternative is the Philadelphia low fat "cooking cream" which is available in Australia. I haven't had a curdling problem with this. Good Luck!

i haven't had this problem. are you using the coconut milk that you make in the EDC p32?

I am very wary of cooking with "light" products as sometimes they don't react the same when you cook with them.

The cornflour trick usually works, I mix it in with the evaporated milk before adding it to the dish.

G'day! I had this happen to me today with powdered coconut milk. Is there anything I can do after the fact that it is cooked as the flavors re the cajun curry prawns are GREAT! Thank you!

I have used the powdered variety, no problems.

I just add 1-2 teaspoons of cornflour and mix with the coconut milk.
It then thickens up, is that a help.

G'day and big thanks for the reply...so the cornflour helps re thickening, does that solve the problem re it splitting too or is that a temperature thing re the Thermomix I will need to figure out and adjust too?
