Peach, Raspberry and Almond Crumble

I usually make double the Crumble,  and freeze  half.  It is simple and delicious.  Somehow just the right combination,  thanks to Rodney Dunn, again. The mix of these two fruits is magic.  It can be made the day before and reheated.

1.8k. of fresh Peaches , cut into wedges. OR 2x 800g tins of Peach Slices, drained
200g of fresh or frozen raspberries or mixed berry fruits.
100g Demerara sugar
2 teaspoons of Amaretto or Brandy

Mix all above together in a large flat serving dish.  (One that can go into the oven).

Into TMX bowl add
250g. plain flour
180 g. frozen butter, cut into small cubes.
100g Demerara sugar
Zap until fine crumbs form.

Tip into large bowl and add  120g flaked Almonds, mix by hand.

Sprinkle over Peaches and Raspberries,
Bake at 200oC for 35 to 40 mins or until top is medium brown.
Serve with cream or Ice cream.

Frozzie -  it was quite nice although I used tin peaches as they are not at all in season here but would like to try it and think it would be very nice with fresh peaches but got the thumbs up from us.

Yum this sounds divine.I can almost taste it thinking about it. But what is Demerara sugar? I haven't heard of this before

Dede, you can buy this at the Supermarket.  It is important to use this,  especially in the Crumble as it gives a little extra crunch even after cooking. Rodney Dunn is very clever with things like this.  It is brown and coarse,  but different to brown sugar.

Thanks for that, I will have a look next time I go shopping. I am usually on auto pilot going around the supermarket so don't really notice other items that I'm not looking for.

I have this new App for my iphone for Woolworth's and typed in Demerara and there it was CSR Demerara sugar, even has a photo so now I know what I am looking for.  ;D

Oh Chookie, I wish I'd seen this about an hour ago.   We've got people coming for lunch and I had some peaches and raspberries.  I've now turned them into a fruit salad with lime but will deffo do the crumble next time.

PS  Demerera sugar is what I burn for creme brulee.  I think it works better than white sugar.

I have that one and also the Coles one as both Stupidmarkets are at the shopping centre I go to, and often I have to go to both to get everything that need  :-)) :-))

I love the sound of this one Chookie, have put it on the menu for the weekend :)

CP 63, so glad you like it.   Having a friend over on Thursday for her birthday.  Trying to decide, This crumble, the lemon ricotta cake or the macadamia and honey tart.  What do you think?

its a toughie cos the Queen of Puddings is delish also...I haven't made your Maca & Honey Tart yet but its been shortlisted for an upcoming dessert. Hhmn, why not do eenie meenie minie mo?

Chookie, your dessert recipes are all nice so I'd make the easiest for tomorrow.  This one certainly fits the bill and the macadamia/honey tart is simply delicious.  Are they weight conscious - go for the one with less calories maybe  ;D

One of the guests is low fat.  the crumble and the ricotta ,  both need cream  and the macadamia one is layers of Filo with butter between the layers ,  but is served without cream.  All can be made the day before.   :-)) :-)) :-)) :-))
