Ideas please...
« on: September 09, 2011, 10:01:36 pm »
I have to make something quickly to take along to my sons soccer break up. I've been told something for "dessert".... What do you lovely people recommend? I need to leave in 2.5 hours. I know, short notice. The manager realised she forgot to email me telling me to bring something.

If you have the cake and fruit, what about a trifle - the custard takes less than 10 minutes and that's dessert made.  A fruit crumble - there are heaps of crumble alternatives, but here's one that you could try:

100g dark brown sugar
100g toasted hazelnuts
120g butter, cubed
70g rolled oats
70g plain flour

Place ingredients into clean dry TM bowl and with dial set to closed lid position, press Turbo button 2-3 times until crumble mixture forms. Sprinkle on top of fruit and bake for approximately 30-35 minutes until fruit is bubbly and fragrant.
Serve warm with plenty of whipped cream and/or ice cream.

Maybe a plate of brownies, but considering the time available and the fact that you are probably flat out running around getting your son ready, etc., there may not be time for that.

I've just noticed that Bron is on the forum at the moment, so she may have some ideas as well, but time is the factor here so fast and easy is what you are needing.

johnro
Jam Drops

125g butter
125g sugar
1 egg
1 teasp vanilla
210g SR flour
jam for filling - strawberry, raspberry,  or apricot (that being said I used fruits of the forest)

1. Beat butter, sugar, egg and vanilla in TMX - 3 mins - speed 4-5. Scrape down sides of bowl, beat further 20 secs same speed.
2. Add flour and stir until combined and mixture leaves the sides of bowl similar to pastry. Takes about 1min 30 sec - speed 3.
3. Roll mixture into balls. Place on papered tray.  Make a hollow in each using end of wooden spoon - place small amount of jam in each biscuit.
4. Bake mod oven until golden.

On that sort of notice, I would just buy some paper cups and plastic spoons, then whip up a fruit sorbet or some yummy custard.  I reckon the soccer boys would love it!

I was going to suggest something similar.

Another thing you could consider is making lemon or passionfruit curd and buying a packet or 2 of those little pastry shells to put the curd in. Perhaps a bit dainty, but i'm sure they will appreciate them.

That would be if you had access to power etc - would be hard if it was down the park with a BBQ as a lot of our soccer wind ups were  :D :D

I would have gone for the good old staple that boys and me alike love - CHOCOLATE CAKE  ;)
