Makes 2 flat breads

1 head of garlic, papery top removed
1tsp & 1tbs evvo
3 1/2 cups of bread flour
2 tsp dry yeast
2 tsp salt
5 tbs of evvo
1 1/3 cups warm water

Preheat oven to 190. Remove paper on garlic head, lay foil on baking tray, drizzle evvo over garlic then wrap in another length of foil. Cook for 45 mins. Let cool, squeeze and mix with oil for a paste.

Place flour, yeast & salt in TM. Combine olive oil and water separately, slowly add this to TM. Knead 6 mins, turn dough into oiled bowl and cover with  cling film. Let it rise for about 1 hour. Divide into to balls, roll out, make dimples in dough with fingers (fun part) smooth garlic paste over both breads. Into oven at 200 for 20mins approx, or until puffy and golden. Transfer to wire rack to cool

Very nice with soup.

Made this today as DS & DH seem to be coming down with a bug, so easy way to get more garlic in them. It was very nice with chicken veggie soup.
