Ice Cream
« on: September 22, 2011, 02:05:13 am »
Does anyone here have an ice cream maker also? Does it defeat the purpose of using the TMX to make icecream? My kids just don't wanna wait for it to freeze and I can't keep up with demand! ;)

Cheers

Kellie

Hi Kellie, There are a few of us on here who have ice cream makers, It does make it fast and easy. I wizz my mixture up in the TM then pour it into the ice cream maker to do its bit. Much quicker.

My icecream maker is going right now. I think it is an excellent machine to use in combination with the TM.  :)

My reply is the same as those above - we love the ice cream maker, but use the TM to mix it first.

Is there a "standard" ice-cream recipe that you all use?
And do you cool the mix in the fridge overnight before it goes in the ice-cream maker?
Thanks  :)

I'd like to dust of my ice-cream maker and start using it again

I just use the recipe in the book that come with the ice cream maker and some time make variations. But we mainly have vanilla as it goes well with other desserts ( warm puddings, fruit etc)
As for the recipe I don't chill it before hand as the milkand cream come straight from the fridge anyway.
Think it's 250g milk and teaspoon vanilla extract.
And 200g sugar (better double check)
I then mix in TM for 2 minutes speed 4
Then add 600g cream and mix 10 sec speed 3.

Tip into Icecream maker and in about 20 minutes I have lovely thick Icecream. Throw in freezer for couple of hours and it's ready to go.

That reminds me I need to make some more.

I like the cooked "custards" best so yes I do cool them in the fridge or freezer before putting it in the ice cream maker to churn.  I like the EDC vanilla ice cream recipe with rapadura instead of the sugar and Tenina's rich chocolate icecream.  :)

I tend to use the custard type recipes too. I leave them in the fridge overnight and then churn them.
May all dairy items in your fridge be of questionable vintage.

Oh you must Mandi - they are sensational.  I have found the uncooked recipes quite icy in texture after trying the custard ones.

I like the custard base better than any of the uncooked ones.
